With the highest protein content of any Caputo flours, Caputo Red (Cuoco) Tipo "00" Flour is ideal for recipes that require extra-long fermentation or baking in a lower temperature conventional oven.

This flour is high in gluten and soft starches, making it ideal for dough that will rise slowly over long periods of time, then hold its shape for even longer. Try using this flour for higher protein dough styles like New York and Detroit. It also works well for cold-prove recipes or those with long fermentation periods.
