One-pot Garlic Chicken

Ooni tip: Remember to pre-heat your cast-iron skillet in your Ooni oven before adding the oil and garlic, this will be a key step to making sure your chicken is fragrant and cooks through well. Keep your Ooni's flame/heat on the mid-low side and under control, you don't want to scorch the top of the chicken and leave the middle undercooked.

Soy Salmon and Broccoli Traybake

You've never tasted salmon until you've tried it made in an Ooni oven. That kiss of high heat, plus the zing of the lemons and the umami from the soy sauce makes for a memorable midweek meal. We followed this BBC GoodFood recipe, and added a generous drizzle of sweet chilli sauce at the end. Ooni tip: We like our broccoli quite crisp so we baked it directly in Ooni at the same time as our salmon, but consider blanching the broccoli before putting in your roasting pan if you like it more on the tender side. Place your salmon on top of your broccoli florets to protect them from getting overcooked on the bottom. Keep your Ooni's flame/heat quite low to prevent overcooking your salmon.

Ooni tip: The original recipe calls for uncooked pasta, but we recommend you cook yours to prevent any potential undercooking. Keep your Ooni's flame/heat on the mid-low side and under control for this recipe as well, you want to reduce the sauce and get a nice little gratin on the cheese on top.
