Yes you can freeze Ooni Dough Balls, our dough balls come delivered as frozen. We recommend that you keep dough balls in the freezer for no longer than 8 months. Once the dough balls have been defrosted, they should be consumed within 3 days. 

For defrosting dough balls there is more than one way you can achieve pizza ready dough.

When frozen, the dough is able to be stored for up to 8 months. Must be used within three days once defrosted.

For a 12” pizza it can depend on the type of pizza you are making. As a general rule we would suggest the Dough ball weight of  240–260 grams. 

That range works well for a typical thin to medium-thin crust (Neapolitan or NY-style).

By style

  • Neapolitan (very thin, airy rim):
    230–250 g
  • New York–style (slightly thicker, foldable): 250–270 g

If you are making dough from scratch it is important that you do not over-knead the dough. This will stop the dough from becoming tough and chewy.
