Asparagus, Feta, and Bacon Pizza

Asparagus, Feta, and Bacon Pizza

This refreshing pizza is one of the easiest ways to enjoy delicious seasonal asparagus. We’ve paired this recipe with salty lardons and tangy feta topped over a sizzling garlic oil base, flame cooked in Ooni pizza ovens and finished with a drizzle of sweet balsamic glaze and crushed black pepper!

Ingredients
Makes 1x 12”/16” pizza

250/330g (8.8/11.6oz) classic pizza dough
5 asparagus stems, finely sliced lengthways
1 tsp of minced Garlic
1 tbsp of olive oil
25g smoked bacon lardons
50g (1.8oz) feta cheese, crumbled
1 tbsp of balsamic glaze / 15ml
Cracked black pepper, to taste

Method

Fire up your Ooni pizza oven. Aim for 500˚C (950˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Place your Cast Iron Pan inside the oven to preheat for 1 minute. Remove the pan and add your lardons, cook the lardons until the fat is translucent, then remove the pan from the oven.

Transfer the lardons to a clean sheet of kitchen paper to cool a little. Mix the minced garlic with the remaining oil in the pan and set aside. 

Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out, then spread the garlic oil evenly over the base with your fingers, or with a pastry brush. 

Take your finely sliced Asparagus stems and layer the slices over the base. Then sprinkle over your cooked lardons and crumbled feta cheese. 

Slide the pizza off the peel and into the oven. Cook for 1-2 minutes, making sure to turn the pizza regularly. 

Finish by topping your cooked pizza with a swirl of balsamic glaze and crushed black pepper. Serve right away!
