For a quick meal or hearty side, this easy courgette fritter recipe is just the ticket! Combine shredded courgette, cheese, and flour and fry in a cast iron pan for maximum crispy goodness. Best served with creamy greek yoghurt and roast veg. Or, try with our garlic and herb chicken skewers – you’ll thank us later!

Ingredients
Makes 6-8 fritters
1 medium courgette, trimmed either side
1/2 medium onion
60g (2.1oz) grated Pecorino Romano cheese
60g (2.1oz) mozzarella cheese
60g (2.1oz) all-purpose flour
75g (2.6oz) finely chopped fresh parsley
1 tsp finely chopped fresh oregano
Salt and ground pepper, to season
1 large egg, lightly beaten
Extra-virgin olive oil, for frying
Plain greek style yogurt, for serving
Method
Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.
Grate your courgette using the largest grater holes. Leave to rest on a clean kitchen towel to soak up any excess moisture. Repeat with the onion.
In a large bowl mix together the courgette, cheese, onion, herbs and flour, finished with a seasoning with salt and pepper. Once combined, set aside.
Preheat your Cast Iron Pan with extra virgin olive oil inside your Ooni pizza oven.
Add the beaten egg to your fritter mix and combine.
Remove the pan from the oven and begin to add the mixture, aim for 2tbsp per fritter. Once you’ve got as many fritters as can fit on your pan, flatten each portion slightly, using a spatula. Place in the oven and cook until golden brown, roughly 1-2 minutes on each side. Once cooked, remove and place on a kitchen towel while you cook the rest.
Once all of your fritters are cooked, serve with your toppings of choice and lashings of greek yogurt. We like to use vine tomatoes, mozzarella, and baby peppers!
