Roast Chestnut, Caramelised Onion, and Stilton Pizza

One of the best flavours of the holiday season has to be roast chestnuts, which paired with creamy Stilton and sweet caramelised onion makes for a delicious festive treat! This pizza is a great meat-free option for hungry guests, and goes perfectly with a finishing garnish of fresh thyme.

Ingredients
Makes 1x 12”/16” pizza

250/330g (8.8/11.6oz) classic pizza dough 
1-2 tbsp olive oil
100g (3.5oz) Stilton/equivalent blue cheese
1 onion, finely sliced
5-6 whole chestnuts
Cracked black pepper, to taste
Sprig fresh thyme

Method

Fire up your Ooni pizza oven. Aim for 500˚C (952˚F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Place a cast iron pan inside the oven to preheat. In the meantime, score your chestnuts with a sharp knife. Once hot, transfer the chestnuts to the hot pan and cook for 8-10 minutes, making sure to give them an occasional shake. Once cooked, set aside to cool.

Peel the cooled chestnuts and cut into quarters.

Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it out on your pizza peel. With a large spoon, spread an even layer of olive oil across the base.

Top with half the Stilton, crumbled, followed by a generous handful of caramelised onions. Finish with the roast chestnut quarters and a seasoning of cracked black pepper. 

Slide the pizza off the peel and into the oven. Cook for 1-2 minutes, making sure to turn the pizza regularly to ensure an even cook. 

Once cooked, remove from the oven and transfer to a serving board. Finish by crumbling over the remaining stilton and garnish with fresh thyme. Cut and serve right away for cheesy, chestnutty heaven!
