Skillet Baked Mac and Cheese

This highly requested recipe comes from Ooni Community member Alexis Abella, who loves cooking the dish for her family. It’s no wonder, for who couldn’t love creamy, cheesy pasta topped with a crispy, flame-cooked cheese crust? Thankfully this recipe is super simple so it’s easy to show someone you care with a big bowl of warming carbs.

500g (16oz) elbow macaroni192g (6.7oz) whole milk2 eggsKosher salt (to taste)226g (8oz) shredded sharp Cheddar226g (8oz) shredded Colby Jack /Gouda cheese110g (1 stick) melted butter

MethodBoil the pasta until it’s al dente, drain, and set aside.

Fire up your Ooni Pizza Oven. Aim for 260°C (500°F) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer. Place your Ooni Skillet Pan inside to warm up.

In a large bowl, whisk the eggs, milk, and salt all together. Add in the cooked pasta, butter, and most of the cheese (save enough cheese for that all-important layer on top).

Pour all ingredients into the preheated skillet. Add your final layer of cheese (don’t skimp this stage) and place inside your Ooni pizza oven.

Cook for 5-10 minutes, making sure to rotate the skillet regularly to ensure an even cook. Once golden and beautifully crispy, remove from the oven. Serve hot for optimum cheesy goodness!
