1. Prepare your pizza dough ahead of time.
2. In a bowl, mix your brown sugar, shaved ginger, cinnamon, and mixed spice together.
3. Take your dough and lay it over a large, floured sheet of baking parchment.
4. With your pastry brush (or your fingers), spread your melted butter across the flattened dough.
5. Using the baking parchment to help guide you, lift the long edge of the dough and begin to roll the dough in on itself, stopping when all the dough is rolled up.
6. Lightly grease your Ooni Skillet Pan with butter, then place your rounds in the pan in a circular pattern, you want the sides to touch, so don’t be afraid of squishing them together a little.
7. Fire up your Ooni pizza oven.
8. Turn the oven completely off, then place your skillet in the centre of the oven to cook in the residual heat for 5-6 minutes, turning halfway through.
9. In a bowl, combine your icing sugar, water, cinnamon and vanilla essence until a thick glaze forms.
10. Serve right away with a napkin or two, sticky fingers are guaranteed!.
